We have made our choice: Move away from the industrial production and meaningless wines and back to traditional wine making with a lot of manual labour like it has been done in generations past. Thankfully this can be done in wine making with ecological principles. This means individual, durable processing in co-operation with nature. We stay far from new-fashioned oenological methods with enzymes, taste makers and wine stabilisers that only mirror quality, where in fact there is none.
We want to make wines relying on year, terroir and the vintner instead of technique and chemicals.
It is our goal to produce honest wines with Heritage and honest wines with Future.
Future meaning wines that keep for a long time and future in the meaning of generations of vintners to come who will have the opportunity to produce wines with structure and fine ‘delicatesse’. The soil is much more of a place where the plants are growing. It is the soil that gives our wines its minerals and it is the soil that feeds us. It is this soil we have to protect and stimulate.
